Doing prawn broth utilizing Thermomix. Prawn broth good for prawn noodle, seafood soup or for doing Hokkien mee.

Elements

  • 500-600 g 500-600 Pork Bone

  • 20 g 20 ginger

  • 1 tsp 1 rice vinegar or apple cider

  • 4 4 cloves of garlic, smashed

  • 1 tbsp 1 pork lard (or oil)

  • 1 tsp 1 brown sugar

  • Prawn shells (from 500g prawns)

  • 1 1 star anise

  • 4 4 cloves

  • 1.5-1.8 litre 1.5-1.8 water

Instructions

  • Blench 500-600g of pork bone with 20g ginger (chopped) – 15mins / 50°C / spoon velocity
  • As soon as carried out, wash the bowl and the bowl.

  • Deliver to boil once more. 1hr / 100°C / Pace 3

  • Seasoning suggestion
    1 tbsp of fish sauce
    1 tbsp of soya sauce
    1 tbsp of darkish soya sauce
    1 tsp garlic powder
    1 tsp rooster powder
